Our latest project is a deliciously enticing exploration of food and flavours; of the pleasures of growing and tasting your own foods and of sharing new experiences with friends, family and neighbours. To achieve this aim we are going to collaborate with artist Lisa Cheung to make Operation Deep Freeze (ODF), a mobile ice-cream making and vending unit that will roam the streets of Greenwich acting as a pop-up community hub and experimental taste sensation!
But these are not ordinary ice creams! These are ice creams as imagined by local school children and residents taking flight in the most Willy Wonka like of culinary fantasy. As part of the project development process we will be working with participants to act as experimental food scientists, mixing and combining ingredients and flavours that will revive even the most jaded of palettes. We will also be exploring the health properties of food - perhaps a delicious cinnamon and rose hip ice cream could be the much needed vitamin c boost in the middle of winter or maybe a chipotle chilli and maple syrup ice cream could be the flavour that puts a bounce in your step on a hot summer afternoon. The aim of the project is not to become ice cream producers but to create unusual, thought provoking and, most of all, fun taste experiences that encourage people to think afresh about the food they eat
At the heart of the project will be our engagement with the community and to this end we have already identified at least seven schools and five community groups across Greenwich and surrounding areas interested in taking part in the project and, once funding is secured, we will be opening out participation even further so that anyone can be involved in this taste bud tingling project.
In a varied programme of community workshops we will not only be creating these awesome flavours but also working with participants to start ODF gardens where they will grow the fresh ingredients for the ice creams. Imagine all the gardens and window boxes of Greenwich bursting with fresh herbs and flavoursome edibles that will be used to create Greenwich's own ice creams! And not only that but we will also be working with participants to create postcard style recipe cards; filled with recipes, gardening tips and fascinating facts about food and its folklore. These postcards will be distributed from the ODF unit to encourage our audiences to try something new and join in the fun of Operation Deep Freeze!
Throughout the project we will be working with participants and volunteers to become part of an ODF team who will take the unit on the road sharing the flavours and inspiring others to create, grow and taste! ODF could be popping up in parks, roadsides, car parks and fairs and will even be available to hire for community events and taste creation workshops. The ODF unit will share 'amuse bouche' type tastes of these conceptual ice-creams with the public and play host to a programme of workshops and performances inspired by the medicine shows of the old west.
